A natural sparkling wine from Colli Piacentini, Italy, made from 100% organic Malvasia di Candia Aromatica. The grapes usually come from quite young vines, and cold maceration is used to enhance the fresh aromatic notes of the variety. Secondary fermentation takes place in pressure tanks and there is absolutely no use of concentrated must, only the naturally sweet free-run juice. Made by Lodovica Lusenti, who inherited the winery from her parents in the 1990s, using native yeasts, the wines are bottled unfiltered, making the wine a touch cloudy - don't forget to shake the bottle slightly to put these natural yeast deposits back into suspension before opening. When these yeasts dissolve, they give more complexity and finesse to the wine.
Malvasia di Candia is a distinct sub-variety of Malvasia that is not part of the Malvasia Bianca branch of the grape family. This is a perfect summertime bubbly, with aromas and flavors of elderflower, honeysuckle, lychee and white peach.
