The Paragon Vineyard in the Western Edna Valley AVA is a cool, windy, coastal site. The soil in the block I sourced the 2017 from has good volcanic content. The particularly cool nights retains lots of classic Albariño acidity, while during the day, the intense California sun advances aromatics, creating a deeply floral wine.
Pair this with anything from the sea (shellfish, sushi, grilled or fried fish) to poultry and pork dishes!
