Winemaker's Notes: "Stolo is a small, organic, family vineyard located just behind the town of Cambria. Just three miles from the Pacific, it is one of the closest to the ocean in the state. There are two goals with Metrick. First, to make fresh and elegant wines that represent their vineyard origins. Second, to test techniques and theories on how to best craft wines to most accurately represent their vineyards. This wine is 100% Pinot Noir (Pommard clone). Grown just 3 miles from the Pacific Ocean in clay soils, which allows for dry farming. Cool days and nights. Owing to the higher humidity from ocean proximity, there is also a smaller diurnal shift than most of CA. A smaller diurnal shift, higher humidity and clay soils are all things I feel encourage the retention of more diverse aromatics and elegant wines. The vineyard is farmed using organic practices. Open top fermented, temperature kept below 73F (to retain more delicate aromatics). Aged 8 months in a single, 18-year old, 500-liter puncheon. Lees removed soon after primary fermentation, to encourage shorter color/tannin polymers (encourages longevity and softness). Unfined/unfiltered."
