Made by Pauline Mourrain and Laurent Troubat, who trained in winemaking in Austraia (hence the name l’Austral) They lease 4.5 hectares (just over 11 acres) in Saumur, Loire Valley. This wine is made from 100% Cabernet Franc, biodynamically. Black currant and raspberry flavors, as well as a slight bitterness and tannins. An unusual pet nat with a lot of charm! No added sulfur.
