Clairin is an un-aged clear spirit from Haiti made from the juice of locally grown wild sugarcane. The juice is then fermented using indigenous yeast strains before pot-still distillation, and the result is a raw, funky and rustic spirit with distinctive grassiness, similar to Martinique's and Guadeloupe's rhum agricole, which is also distilled from sugarcane.

Clairin is produced by hundreds of micro distilleries, each with their own respective terroir. North of Haiti’s capital, Port-au-Prince, in the Saint Michel de l'Attalaye region, is the Chelo distillery, built by Michel Sajous. This small distillery is located in the middle of the plantation and spans 30 hectares, which are planted with different varieties of organic sugarcane. Fresh, herbaceous and fruity, this is Clairin at its finest.  It has notes of fresh apples, pickled herbs, green olives, bee pollen white pepper and honey with a medium body and exhibits a lovely structure that lends itself to use in citrus-based cocktails.
