Tequila Fortaleza launched in 2005, although great-great-grandfather, Don Cenobio, founded his first distillery – La Perseverancia – in 1873, in the town of Tequila, Jalisco. The family maintained the property until 1976 but then was re-purchased by great-grandson Guillermo Javier in 1999. After some renovation, he continues to make tequila in the same way it was made over 100 years ago – with a small brick oven to cook the agave, a tahona to squeeze the juices out of the agave, wood tanks for fermentation, and the two original copper pots for distillation...and a carefully hand-blown bottle!

For the 150th bottling run since Guillermo first fired up their 1903 boiler almost 20 years ago, and for the first time, Fortaleza decided to ferment the mosto with the bagazo (cooked & crushed agave fibers) in their open topped wooden vats.

With no water added after distillation, this tequila was distilled to exactly 80 proof (40% ABV).
