This sake comes from husband and wife team Kiichi and Akiko Hakuto and is from Wajima, located on the tip of the Noto Peninsula in Ishikawa prefecture. (Wajima is famous for “Wajima-nuri,” “nuri” being lacquerware.)
Hakuto is elegant, refined, delicate, and charming. This Tokubetsu Junmai is a perfect representation of their house style—balancing full flavor with elegance and refinement. Stylistically, it shows umami, hints of sweetness, subtle fragrance, and finishing spice. On the nose, this sake shows honey and winter spice. On the palate, these same notes come through with complexity, subtlety, and finesse. It finishes with a crisp spice. It is a sake that continues to draw you in with each sip because of its balance, elegance, layers, and flavor.
