Sforzato from the Valtellina of northern Italy is a rich, bold red wine made from Nebbiolo grapes that have been dried by the passito method of drying out the grapes on straw mats after harvest. This is a dry wine that would be formidable with a starter of Bresaola and rich cheeses.
