This vintage is a blend of Cinsault and Grenache from Saint-Julien-en-Saint-Alban. The blend, which may vary slightly depending on the harvest, is approximately 75% Cinsault and 25% Grenache.
During vatting, the Grenaches are destemmed and the Cinsaults are whole clusters. Vatting lasts about a week - the vatting time depends on the fermentation speed. After pressing, the wine will finish fermenting in concrete vats, and will be racked off once to clean the wine to spend the winter in concrete vats.
The wine is bottled in spring without filtration.
