NAMA (unpasteurized) GENSHU
A semi-sweet and heavily umami-driven sake from Akita. A nama genshu style, this is a sake that is both unpasteurized and undiluted (retaining a resounding 20% ABV from the fermentation). Usually unpasteurized sake has to be kept refrigerated, as it will continue to ferment on its long journey to becoming vinegar, but sealed in an air-tight can it is possible to kept this on the shelf until opened. The sweetness is integrated, not cloying at all, and the flavor is an exceptional compliment to spicy dishes and hearty meats.
