Vinification : Destemmed harvest, rigorous temperature control, short vatting.
The vinification is as natural as possible: no addition of sulfur to the vatting, indigenous yeasts ensuring fermentation. No fining, no sulphite (wine without added sulphite)
Aging : 5 months in vat
Bottling : after Easter
Keeping : Drink within 2 to 3 years.
Accompaniment : As an aperitif with tapas, all grills and mixed salad.
