100% Baga sourced partially from Filipa and William’s estate vineyards in Ois do Bairro, and partially from other growers in various villages in Bairrada. Handpicked, fully destemmed, and fermented and raised entirely in tank with a very gentle extraction.
Distinguished and elegant fruit-driven nose with notes of strawberry, damson plum, licorice and hints of black pepper. Fruity and balanced on the palate with a velvety texture which leads to a fresh finish. Pairs well with charcuterie, dried cheeses, and white meats.
Passion for the traditional indigenous grape varietals of Bairrada led Filipa Pato to start her own project in 2001. She works a total of 12 hectares of vineyards scattered in various plots throughout the Bairrada appellation of Portugal. Utilizing biodynamic farming practices and minimal-intervention winemaking, Filipa and her husband, Belgian sommelier and restaurateur William Wouters, produce vinhos autênticos sem maquilagem – ‘Authentic Wines Without Makeup.’
