Clairin is an un-aged clear spirit from Haiti made from the juice of locally grown wild sugarcane. The juice is then fermented using indigenous yeast strains before pot-still distillation, and the result is a raw, funky and rustic spirit with distinctive grassiness, similar to Martinique's and Guadeloupe's rhum agricole, which is also distilled from sugarcane.
Clairin is produced by hundreds of micro distilleries, each with their own respective terroir. Le Rocher is a distillery at a higher elevation, creating their Clairin in the style of Jamaican single pot still by boiling wild sugarcane juice into syrup. The use of 30% dunder (Rum "Sour Mash") helps manifest wild, brazen aromas and flavors. Scents of coconut husks, overripe bananas, petrol, sea salt and cinnamon abound. The flavors lend themselves to grilled corn, dill pickles, burnt rubber, soy beans and tropical flora.
