Manzanillas, like finos, incorporate the same winemaking and aging-under-flor techniques, which preserve freshness and promote salinity. Because manzanillas are the lightest of Sherries, they pair exceptionally well with raw seafood. This example comes from Bodegas La Cigarrera, a small, family-owned bodega in Sanlúcar de Barrameda. It was founded in 1758 and only in 1997 did they started to bottle their own wines.
91 points – “Very fresh, with a lively fleur de sel note that pierces the mix of quinine, chamomile, white peach and dried lemon peel flavors. The long, pure finish is bony and mouthwatering. Drink now. 250 cases made, 83 cases imported.” (Wine Spectator, May 2018)
