TERROIRS The vineyard encompasses nine hectares (approximately 22 acres) of limestone and clay soils in the village of Chevannes on the hillsides of the Hautes Côtes de Nuits. Higher in altitude than the Côte de Nuits, the vineyard’s grapes benefit from full southern sun exposure to facilitate ripening.
FARMING Conventional farming with a preference for sustainable practices whenever possible. In
general, no synthetic herbicides or fertilizers are used. Yields are kept low through de-budding
in the springtime. Grass and weeds are controlled by plowing.

WINEMAKING The grapes are harvested by hand, rigorously sorted for quality and gently pressed by pneumatic press before undergoing alcoholic fermentation on native yeasts in stainless steel tanks. 100% malolactic fermentation. In the classic méthode champenoise, the wine undergoes a a second alcoholic fermentation inside the bottle and then rests on fine lees for a minimum of nine months before disgorgement and dosage (9 gr/L).
TASTING NOTES Pale yellow gold color with a tiny and persistent bead. Cornucopian aromas of apple and peach are tempered with toasty notes and minerals. This crémant’s rich and creamy texture
hints of freshly baked lemon scones before hitting its crescendo with a zesty, mineral finish.
