Bibiana González Rave crafts her Alma de Cattleya wines to showcase the splendor of California. Currently focusing on Sonoma County, Napa Valley and the overall Wine of California appellation, each glass embodies the soul of the vineyards, orchards, and farms that make up this bucolic California landscape.
The fruit for our Rosé of Pinot Noir comes from the cool hillsides of the Sonoma Coast. Grapes are handpicked at night and delivered to the winery at very low temperatures. This wine is a combination of saignée juice and hand-sorted Pinot Noir clusters that are pressed and carefully transferred to neutral barrels or stainless steel tanks to start very cold fermentation. The result is a crisp, savory rosé with intense and complex aromatics.
A pale, shimmering salmon hue, this bright, crisp, and mouthwatering rosé has notes of crushed strawberry, rose petal, and citrus peel. A brief decant or a few aerating swirls in the glass will make this wine truly burst.
